SAUSAGE KALE POTATO SOUP






This recipe is excellent. I'm learning to love Kale. This is a yummy way to get your entire family to eat something healthy.
Pair this soup with some crusty bread. What a great meal.

SAUSAGE KALE POTATO SOUP
Copy cat to OLIVE GARDENS version.

1 PACKAGE OF DICED ITALIAN SAUSAGE
3 TABLESPOONS OF BUTTER
BACON GREASE FROM FRIED BACON 4 SLICES
1 LARGE ONION DICED
1 CUP OF CHOPPED CARROTS
MELT BUTTER AND GREASE TOGETHER. ADD CARROTS AND ONION. COOK TILL ONIONS ARE TENDER
4 CUPS CHICKEN STOCK
2 CUPS POTATOES diced.

, SAUSAGE dripped into pot in individual sections AND COOK TILL TENDER potatoes are tender. 
add
1 1/2 CUPS OF KALE
CHOPPED HANDFUL OF FRESH PARSLEY
2 TABLESPOONS OF THYME
ADD THESE INGREDIENTS ALONG WITH BACON CHOPPED.
Reserve some stock about a cup and whisk 3 tbls flour then add to pot
COOK TILL KALE IS DONE
STIR ADD 1 CUP OF HEAVY CREAM and parmesan cheese.  COOK TILL WARMED THROUGH ABOUT 15 MINUTES. SERVE WITH WARM CRUSTY BREAD OR SALAD.
