Apple pie


Tonight I felt like making pie instead. Apple pie that is. Hubby is picking up some ice cream on the way home.  I used the left over pie crust from the chicken pot pie the other night that I made. I always make a double batch and freeze half for a quick and easy pie down the road.

Apple Pie

·         Pie crust (find in Chicken pot pie post)
·         4 diced apples
·         2tsp flour
·         ½ cup brown sugar
·         3tsp pumpkin spice
·         1 egg
·         2tsp sugar

Preheat oven to 400*. Roll out pie crust to fit pie pan. Mix apples, flour, brown sugar and spices together. Pour into pie crust. Roll out extra pie crust and cut into strips to layer on the top.  Pinch the sides to make sure it is sealed. Blend the egg together and use a kitchen brush and brush the top of the crust all over. Sprinkle some sugar lightly over the top of crust.
Place in oven at 400* for 10 minutes then lower to 375* for 40 minutes. Let cool and enjoy.
